Cow's Milk Turmeric Rice

Continuing with my journey replacing coconut milk with my 4pints of whole milk (I'm not really a tea-with-milk kind of person). My birthday is around the corner, my family usually celebrates with yellow rice.
Usually accompanied by fried chicken or rendang, sliced omelette, caramelised tempeh and peanuts stir fry, beef floss, potato fritters, shrimp crackers, and cucumber and tomato slices. In this version, I use leftover fish floss, scrambled eggs (because making omelette one by one is pretty tiring), and the vegetables from the curry I made before for side dishes. You can pair it with other dishes too, I suggest something on the sweeter side like pulled meat, jerky, or caramelised tofu.
You can actually use only the turmeric, but it'll be just "yellow rice". You can also skip the turmeric, it will be a "nasi uduk" or a "nasi lemak" instead.
I went basic with my kitchen utensils, so I don't have a rice cooker now. I followed The Kitchn stovetop rice method. If you have rice cooker, just replace the water with milk and add the spices into the pot. Alternatively, you can cook this in the microwave (1 cup rice, 2 cups liquid) with lid but 1 corner opened, I usually do 11-13 minutes in 800W microwave, stir and add 2 more minutes if it's still too liquid-y, then wait until cool.
Utensils needed: knife, stovetop pan with lid
Warning: please don't use your favourite white pot or best clothes. Turmeric yellow is sadly not too easy to wash.

Steps
- 1
Chop garlic and onion (if you have mortal and pestle, that will be better). Crush the bay leaves (bay hand) and lemongrass stalk (using the blunt edge of your knife).
- 2
Wash the rice 2 times. Meanwhile, start boiling the milk in low heat. Add the spices and the turmeric powder into the boiling milk, stir not to let the powder clumps.
- 3
Add rice into the milk mixture. Boil in medium heat for 18 minutes with the lid closed.
- 4
Turn off the stove. Wait for the rice to steam for 10-15 minutes.
- 5
Enjoy your rice with other side dishes, you can go traditional like what I said above, or any side dish really.
