Braised swede - can be vegan

The last time i ate swede was when i was a child and we used to have mashed swede and carrot 🥕 ... i wasn’t a fan! However, there was a lone swede in the veggie box ... i thought about roasting it then saw a recipe for braising. And i decided to add the star anise because i love it and was not hopeful about the swede on its own! Anyway, it tasted good 🧡

Melt a chunk of butter in a pan on a medium heat. The pan needs to be big enough to lay the swede pieces in as 1 layer.

Add the swede so it forms one layer in the pan. Don’t stir but let the swede cook and turn golden brown and then turn and do the same on the other side. The swede almost caramelises.

Then add the stock and the star anise. Bring to the boil and then simmer until the swede is tender. This can be 20-30 mins. Add more stock if it starts to dry out. You end up with more of a syrup rather than a sauce.
