Vegetarian Egg Rolls (Air Fryer)

Today I made soy milk and mung bean milk, and had leftover soy and mung bean pulp, so I used them to make egg rolls. Ever since I got an air fryer, I make egg rolls much more often!

Mix all the ingredients together with salt, sugar, and pepper.

Roll the filling in rice paper wrappers. Do not soak the rice paper; just brush it lightly with water so the wrappers stay crispy.

Preheat the air fryer for 5 minutes at 400°F (200°C). Add the egg rolls and air fry for 7 minutes at 355°F (180°C), then take them out, turn them over, and air fry for another 3 minutes. Adjust the cooking time depending on how many egg rolls you have. I didn't use any oil, but the egg rolls still turned out very crispy.
