These are my go-to pancakes! I’m in love with them and they’re almost my favorite breakfast. Especially these days, I feel like I’m really treating myself with the things I love most.

These are my go-to pancakes! I’m in love with them and they’re almost my favorite breakfast. Especially these days, I feel like I’m really treating myself with the things I love most.

I used oats that were already ground, which makes this recipe easy, but it works just as well with whole oats.

In a bowl, mix the ingredients. I find it easiest to add the egg and oats first, mix, then add the banana in slices. Keep mixing and mashing until everything is well combined.

Heat a medium nonstick skillet. Pour in the batter and cook slowly on one side. Use a fork to gently lift the edges. If the batter sticks or breaks easily, let it cook a bit longer.

Flip and toast on both sides until golden brown. They’ll be a bit darker than regular pancakes because of the oats. I served mine with extra banana and plenty of honey. You can also sprinkle cinnamon on top for extra flavor!
