These super sweet cookies are crunchy on the outside and soft on the inside. The perfect cookie for a girls' date or energy snack for children. (one is enough, at most two!)I first made these with a dear friend Emma last December on Christmas Eve. Got the recipe from Jacqueline Bellefontaine's Cookies galore recipe book. Gather ingredients

Lightly grease baking tray

Cream the butter and sugar together until pale and fluffy
- 4
Add vanilla extract to egg and beat lightly then add to sugar butter mixture

Sift the flour and baking powder
- 6
Pour creamy mixture into the flour and fold in, mix with spatula or wooden spoon till well combined
- 7
Add the chocolate chips and mix till well combined

Scoop a table spoon at a time of dough and make balls. Arrange on baking tray spacing well apart.

Bake for 15 minutes at 180 degrees

Let cool in baking tray for 2-3 minutes then transfer to wire rack to cool completely

Serve. Store the rest in an air tight container.
