Ingredients

Serves 5 to 6 servings
  1. 500 gramspaneer (about 1.1 lbs)
  2. 6onions (3 sliced, 3 diced)
  3. 4large tomatoes
  4. 13-14garlic cloves
  5. 2medium green bell peppers
  6. 2-inch piece ginger
  7. 2bay leaves
  8. 2 tablespoonscilantro (fresh or dried)
  9. 2-inch piece cinnamon stick
  10. 2 teaspoonscumin seeds
  11. 12black peppercorns
  12. 1 1/2 teaspoonsgaram masala
  13. 1 teaspoonKashmiri red chili powder
  14. 1 tablespoondried fenugreek leaves (kasuri methi)
  15. 2 tablespoonsheavy cream or malai

Steps

  1. 1

    Cut the paneer into large pieces.

  2. 2

    Heat a wok or large skillet and dry roast all the whole spices. Let them cool, then grind them into a powder.

    Heat oil in the wok and fry the paneer pieces. Remove and set aside on a plate.

  4. 4

    Sauté the diced onions and bell peppers for 2 minutes, then remove and set aside.

  5. 5

    Add ginger and garlic to the oil and sauté. Add the sliced onions and fry for 2-3 minutes, then add the chopped tomatoes and cook for another 3-4 minutes.

    Turn off the heat, transfer everything to a plate, let it cool, then blend into a fine paste.

  7. 7

    Clean the wok, add oil, and heat. Add the onion-tomato paste and sauté for 2 minutes.

  8. 8

    Add salt, red chili powder, and garam masala. Sauté for 1 minute, then add the ground whole spices and cook for another 2 minutes.

    Add cream or malai and a little water. Cook for 1-2 minutes.

  10. 10

    Add the paneer, diced bell peppers, and onions. Mix well and cook for 5 minutes, then turn off the heat.

    Serve hot with roti, paratha, or naan.
