Crunchy on the outside, soft and chewy in the middle, the perfect cookie for the whole family. These are great for any time of the year and the dough freezers really well too. To freeze the dough, roll into a worm shape and wrap in plastic wrap. When you want to bake it, take it out the freezer, let it thaw and then cut slices and bake as normal.

Preheat the oven to 180. Grease baking sheets

Cream the castor sugar and butter
- 3
Add 1 eggs in at a time and beat until mixed well, then add the next egg

Add the flour and mix until it is a soft dough. Allow dough to chill in fridge for 5 minutes

Roll dough balls (2 teaspoons of dough), then roll the ball in the crushed cornflakes and place on baking tray

Flatten slightly with a fork and place a piece of cherry on top. For a variation, add a chocolate chip or anything which you prefer.

Bake for 12-15 minutes or until they are brown

When ready, take out and leave to cool on a wire rack
