So I'm obsessed with my new appe/paniyaram maker and always in search of making something in it.
And was also craving for some chatpata chaat for quite a long time after seeing everyone's #lockdown chaat preparation at home.
So thought of giving makeover to our normal appes and made something chatpata out of it. This can be made with leftover idlis as well 😇

So thought of giving makeover to our normal appes and made something chatpata out of it. This can be made with leftover idlis as well 😇

Wash and soak the urad dal and rice separately for about 8 to 10 hours, then grind the dal and rice with water separately and mix them together and make a smooth batter of it. Cover it and allow it to ferment for another 8 to 10 hours.

Next, add baking powder and a pinch of salt, mix it well again. Next grease the paniyaram/appe maker with very little oil and put 1tblsp of the batter in each mould. Cover and cook it from one side for about 2-3 minutes, flip it and again cover and cook it from the other side for another 2-3 minutes. Take it out from the paniyaram/appe maker and keep it aside.

Next heat oil in a kadhai, add cumin seeds and let it splutter, next add the chopped onion and fry it till translucent. Next, add the chopped garlic and fry it till it becomes little brownish in colour. Next add the chopped capsicum, green chilli and tomato, cook it well for about 3-4 minutes until tomatoes become soft and mushy.

Next add the pav bhaji masala, red chilli powder and salt and fry the masala well in low flame by adding little water at a time for about 3-4 minutes. Next, add the tomato ketchup and again cook for 2 minutes.

Next add the appe/paniyaram and coat it well with the masala, splash little water, if it becomes too dry. Fry it for about 2-3 minutes and take it out.

In a serving dish, put the fried masala appe and garnish it with whisked curd, sweet tamarind chutney, green coriander chutney, roasted cumin powder, chaat masala, some Sev or chana dal fry or peanuts and enjoy.
