Put the chicken in a bowl to marinate with the lemon juice, garlic, black pepper and 1tsp of salt. Leave it marinating for 15/20 minutes.

In a pan, add the vegetable oil and cook the onions and leek together until it's soft and slightly caramelized.

Add the chicken to the pan and arrange them on top of the onions and leeks. Place the lid on and turn the heat to low medium (3 on my hob). Leave it to cook for 2 minutes then turn the chicken over letting it to cook for 2 more minutes with the lid on.

Add the carrots, the celery and the pepper. Mix it all and leave it to cook for 2 more minutes with the lid on.

Rise the heat up one stop (4). Add the remaining salt, oregano, turmeric and bay leaf. Mix it well with all the juices, put the lid on and let it cook for 10 more minutes, mixing it ocasionally.

Last, add the parsley on, mix and serve. Buen apetito!
