I got me a plumb tree, I like jam, especially plumb jam. You know it makes sense!

Pick plums that are ripe, but not overripe. Wash them, remove the stones and chop into chunks. Juice the lemon. Wash the apples and chop into small chunks (removing core).

In evening: Put the chopped fruit into a large tupperware or bowl. Add the lemon juice, spices and sugar. Stir well.

Sterilise jars for the jam! Put 2 dessert spoons in freezer.

Add the jam mix to a large maslin pan. Using a silicone spatula, gently heat the mixture till all the sugar has fully dissolved.

Bring to a rolling boil. Stirring frequently. Remove star anise (if possible).

Boil for 15 minutes, stirring frequently.

Test the jam by putting a little on a cold spoon. Let it cool for 30 seconds, then push it with your finger. If it wrinkles it's set. If not, boil for 3 more minutes then try again. Repeat till set.

Leave for 15 minutes, stir (stops fruit settling). Ladle into sterilised jars leaving 1 cm at the top. Screw on lids.
