Ingredients

  • 2 1/2 cupsall-purpose flour (about 300 grams)
  • 1/2-2/3 cupwarm water (130-150 grams)
  • 5 tablespoonsolive oil
  • 1 tablespoonvinegar
  • 1 teaspoonsalt
  • 1.1 poundskasseri cheese, or your preferred semi-hard cheese (about 500 grams)

Steps

    Start by making the dough: combine all the ingredients, adding the warm water gradually since you may need a little less or more.

  2. 2

    Once the dough is ready, let it rest for 30 to 45 minutes. Meanwhile, preheat your oven to 350°F (180°C).

  3. 3

    Roll out the dough into medium-thick sheets and fill them with the kasseri cheese of your choice.

  4. 4

    Grease a baking pan with olive oil and shape the filled dough as you like. I chose a rose shape because it's easy to arrange.
