Also known as njahi, they have a acquired earthy taste and a meaty texture. These are a popular dish where I am married in the central part of Kenya. Very filling due to high fibre content and truly nutritious. When we make it, we eat it alone. #stayathome

Steps

In a pot on medium heat, add oil and onions. Saute till soft and translucent.

Add garlic and stir for 1 minute untill aromatic.

Add tumeric, stir continuously.

Add carrots and ginger.

When the carrots are soft and well incoporated with the ginger and tumeric, add the boiled beans.

In a separate pot heat the beef broth.
- 7
Add broth or hot water, stir on high heat untill it begins to bubble. Add corriander, turn heat down and let simmer for 5-10 minutes, depending on how much soup you want left. I like mine completely reduced

Serve warm.
