Chop fish in food processor to make sure it is very finely chopped.

Mix fish, egg, white pepper, 2 teaspoons of vegetable oil, water (water and fish about half half size, 2 table spoons of corn flour, 7-8g ginger mix in the cake mixer

In the beginning it is very loose, so add salt gradually, and try to taste it to make sure it is not to salty. if the salt is very little, it won't become sticky. so after mix a whilte, looks like it became thick and ready to form balls.

Now get cold water ready, put fish ball into the water, if it floats, it means, it is ok. then bring the cold water to boil

Done, and can keep in fridge about 2 days.
