A little spicy Desi twist to the usual chili

Ingredients

5 big servings
  1. 1/2large onion - diced roughly
  2. 2-3 tablespoonolive oil
  3. 1red bell pepper - diced
  4. 1green bell pepper - diced
  5. 1orange bell pepper - diced
  6. 1jalapeno pepper diced
  7. 1 canblack beans
  8. 1 canpinto beans
  9. 1 cansweet corn
  10. 1 candiced tomatoes or pasta sauce or 2 tomatoes diced
  11. 1bayleaf
  12. 1cinammon stick
  13. Bunchfresh basil leaves (optional)
  14. 1 tablespoonCumin powder
  15. 1 tablespoonCoriander powder
  16. 1/2 tablespoonGaram masala powder
  17. 1/2 tablespoonRed chilli powder - to taste
  18. 1/2 tablespoonKashmiri red chilli powder (optional)
  19. 1/2 tablespoonTurmeric powder
  20. 1 teaspoonGarlic powder
  21. to tasteSalt
  22. 1/2 tablespoonBlack pepper
  23. 1lime squeezed or 2 tablespoon lime juice

Cooking Instructions

    Put oil in a Crock-Pot express pan and turn on saute mode. Add onions and saute till translucent. Then add bell peppers, cinammon stick and bay leaf and saute.

    Add all the canned beans and continue sauteing. Add all spices.

    Add tomatoes/tomato pasta sauce. Add 1 cup or half cup of water.

    Switch Crock-Pot express to beans/chilli mode and set for 20 minutes. After 20 minutes, quick release the steam (optional, can also let it naturally release).

    Take out half cup to 1 cup of chilli from Crock-Pot, blend it and then pour it back into the chilli. Put lime juice in. Taste and see if anything is missing.

    Garnish with cheese and spring onions. Serve with dollop of sour cream, avocado and tortilla chips.
