To prepare the dough: Mix the dry ingredients together, then add the wet ingredients. Knead by hand or with a stand mixer for 10 minutes until the dough is smooth and elastic. Place the dough in a clean bowl, cover with plastic wrap, and let it rise for 1 hour until doubled in size.

Roll out the dough with a rolling pin to about 1/4 inch (0.5 cm) thick.

Cut the dough into circles using a medium-sized cutter.

Mix the feta cheese with dried thyme and olive oil, then place the filling on top of the dough circles.

Fold the dough over the filling and seal the edges well.

Mix the egg yolk and brush it over the pastries, then sprinkle with black sesame seeds. Bake in a preheated oven at 350°F (180°C) for 10 minutes on the lower rack, then 3 minutes on the upper rack until golden brown.

Remove from the oven and serve.
