Ingredients

  • 1mackerel fillet diced
  • 1potato diced
  • 1tomato diced
  • 2carrot sliced
  • 2spring onion chopped
  • coriander
  • Soup Base:
  • 1 head& bones of mackerel
  • 3 clovesgarlic
  • 6shallot
  • 1red chilli chopped
  • 1small pieces of ginger
  • 1 tbspsalt
  • 1 tbspwhite pepper
  • 1 tspsugar
  • 1 tspfish sauce

Steps

55 minutes
  1. 1

    Prepare the soup base by adding head and bones of mackerel, garlic, shallot, chilli and ginger. Season with salt, pepper, sugar and fish sauce. Cook with low heat for about 45 minutes.

  2. 2

    Meanwhile, prepare other ingridients.

  3. 3

    After the soup is set, add potato, carrot and tomato. Cook it for 10 minutes then add the fish, spring onion and coriander. Cook it quick for just 5-7 minutes.
