Ingredients

60 minutes
Serves 6 servings
  • 2 cupscouscous (about 340 grams)
  • 4medium chicken breasts
  • 1small squash, cut into medium to large pieces
  • 1large potato, cut into large pieces
  • 2carrots, sliced into rounds
  • 1 1/2large onions, roughly chopped
  • 3ripe tomatoes, finely chopped
  • 3 tablespoonstomato paste
  • 1 cupcooked chickpeas (about 165 grams)
  • Dried apricots, raisins, or dried cherries (optional)
  • 1chicken bouillon cube
  • 1/2 cupolive oil (about 120 ml)
  • or 1 tablespoon clarified butter or unsalted butter
  • 1 teaspoonmixed spice blend
  • 1 teaspoonturmeric
  • 1 teaspooncinnamon
  • 1 teaspooncumin
  • 1/2 teaspoonground cardamom
  • 1 tablespoonsalt
  • 1 tablespoonwhole caraway seeds
  • 1 tablespoonground ajwain (bishop's weed) spice
  • Cilantro for serving

Steps

60 minutes
  1. 1

    Sauté the onions in olive oil until golden brown.

  2. 2

    Add all the spices to the onions and stir.

  3. 3

    Add the chicken and brown it well.

  4. 4

    Add the carrots, potatoes, and squash.

  5. 5

    Add the chopped tomatoes and tomato paste, then cover with water.

  6. 6

    Add the chicken bouillon cube and let the mixture simmer over medium heat for up to 30 minutes.

  7. 7

    In another pot, add 3 cups boiling water (about 710 ml), salt, and a tablespoon of clarified butter or unsalted butter. Add the couscous and let it cook over medium heat.

  8. 8

    After 5 minutes, reduce the heat and let the couscous steam until the grains double in size.

  9. 9

    Fluff the couscous gently with a fork from all sides.

  10. 10

    To serve, spoon the couscous onto a large, deep serving platter and top with the vegetables and chicken.

    Garnish with dried fruit. Serve extra sauce with vegetables on the side.
