Rinse the shirataki noodles (such as Slim Pasta Fettuccine) under water, then blanch them briefly. Drain well and set aside.

Heat oil in a pan and sauté the minced garlic until fragrant. Add your choice of meat and the stems of the Chinese broccoli (since they take longer to cook). Stir-fry until cooked through, then crack in the eggs and scramble.

Add the shirataki noodles. Season with oyster sauce, light soy sauce, dark soy sauce, and stevia to taste. Stir-fry until everything is well combined, then add the remaining Chinese broccoli leaves. Toss until the leaves are just wilted. Transfer to a plate, sprinkle with ground black pepper, and serve.
