A great tea time snack that is fast and easy to make! They are crunchy and very tasty.
Cooking Instructions

Measure your ingredients. Sift your flour, salt, baking powder and baking soda together in a separate bowl and set aside.

In a larger bowl beat the butter until it is very soft. Sift in your icing sugar and beat well until its incorporated and almost double in size. Remember to scrape the sides of your bowl frequently.

Beat your egg and add in the vanilla essence. Add the egg mixture and orange juice to the butter mixture and mix until incorporated. Add your flour in batches as you mix. Use a mwiko/spatula to do the final folding after all the flour is incorporated. Cover your cookie dough and let it rest in the fridge for 15 minutes. Preheat oven at 180 degrees Celsius.

Butter and dust your baking tray. Roll out equal pieces of the dough into small balls and place them on the baking tray a few inches apart. Gently pat them down and bake in a preheated oven for 15 minutes until golden brown.

Allow the cookies to cool in the tray before gently removing and transferring to a wire rack to cool completely. Serve and enjoy when completely cooled 😍
