Saute onion with coconut oil in a pan. Add green chillies and curry leaves. To this add a pinch of turmeric powder.

Once onions are translucent, add grated coconut and mix well. To this add chopped beetroots with enough salt and keep cooking at the low flame with lid closed.

Serve it with rice and raita.
