I discovered that Genovese pesto pairs well not only with meat but also with fish (check out my profile for Salmon with Pesto on a Bed of Green Beans).
Steps

Pound the chicken to flatten it. Spread a tablespoon of pesto on each piece, then top with pancetta and cheese. Season with salt and pepper.

Roll up each piece and secure with toothpicks. Dredge in flour, then dip in beaten egg, and finally coat with breadcrumbs.

Place the roll-ups on a baking sheet lined with parchment paper. Drizzle with a little olive oil.

Bake at 450°F (230°C) for 15 minutes with the broiler on to create a crispy crust.

This is the lighter version, but you can also deep-fry them in plenty of vegetable oil if you prefer.
