Boil the potatoes until soft. Peel and mash them well.

Heat 1 tbsp oil in a pan. Add onion, garlic, ginger, and green chilies. Sauté until softened.

Add the fish, curry powder, chili powder, turmeric, pepper, and salt. Cook for 3–4 minutes.

Add the mashed potatoes and mix everything together.

Turn off the heat and add lemon/lime juice and chopped coriander or parsley. Mix well.

Let the mixture cool completely.

Take a small portion and shape it into an oval or round cutlet.

Dip each cutlet into beaten egg, then coat well with breadcrumbs.

Heat oil over medium heat and deep-fry the cutlets until golden brown and crispy.

Drain on paper towels and serve hot.
Tips
Let the filling cool before shaping so the cutlets hold their shape.
* For extra crispy cutlets, double-coat with egg and breadcrumbs.
* Don’t make the oil too hot, or the outside will brown before the inside is heated.
* You can use canned mackerel, tuna, or salmon instead of fresh fish.
