First, rinse the sabudana thoroughly and soak it for 30 minutes. Add just enough water to cover the sabudana while soaking.

Add all the spices to the soaked sabudana and mix well. Peel and mash the boiled potatoes, then mix them into the sabudana mixture.

Wet your hands slightly and shape the mixture into small vadas (patties). Heat ghee or oil in a pan and fry the vadas on high heat until golden brown.

Serve the hot sabudana vadas with coconut chutney.
