Olan is a stew made in coconut milk with ashgourd and cow peas. It is a traditional recipe from Kerala.

Soak cow peas overnight.

Pressure cooker the cow peas for 2 whistles.

Cook the ashgourd in thin coconut milk till half done. Add chillies. Add a cloves of garlic.

Wash and add the cow peas.

Add salt.

Add thick coconut milk. Let it simmer for two minutes.

Add coconut oil. Add curry leaves.
