Ají de Quinua 🇵🇪

Friends, I'm sharing another very interesting recipe: Ají de Quinua. Some people call it QuinOa, I know it as QuinUa... either way, it's the same thing. These days, you can find the traditional white variety, but there’s also red and black quinoa. It’s amazing how things change over the years. Before, we barely noticed it or used it differently, but now, wow, it’s in almost every healthy dish because of its high protein content and more. You can make delicious breakfasts, salads, and main dishes with it, like the one I’m sharing today. The result: excellent, easy, and very tasty. The dish is called Ají de Quinua, a healthy version of ají de gallina or chicken ají, which is what most people use these days.

The rice is optional. If you want, serve it as a side. I made fluffy rice using oil, garlic, salt, and bay leaves. Wash the rice well, add 3 cups of hot water, and cook. Set aside.

First, prepare the QUINOA. Rinse it thoroughly (5 times, since quinoa has saponin, which gives it a bitter taste, so you need to wash it very well). Put it in a pot, add HOT water and a little salt. When it comes to a boil, cook for 15 minutes. Turn off the heat, drain, and set aside. Meanwhile, cook the chicken breast. Wash it, place it in a pot with all the vegetables and hot water. Do not add salt.

When the chicken breast is tender, remove it and turn off the heat. Strain the broth; you now have a perfect chicken broth. Set aside. When the chicken is cool, shred it and set aside. In another pot, boil the potatoes and eggs. When ready, set aside. Have the other ingredients ready as well. You can buy yellow chili pepper paste already prepared in sealed packets at a good price.

These are the chili peppers you should use. To save time, buy the paste ready-made in sealed packets, or you can make your own. You can find recipes for it in my collection, and I’ll share more versions later.

Now, let’s start. Over medium heat, make a traditional sofrito. In a pot, add a splash of good-quality oil. When hot, add the garlic to flavor the oil, then add the onion and cook until golden. Next, add the yellow chili pepper paste and stir. Add salt, pepper, and turmeric...

Cook the chili paste until it separates from the oil and is well cooked. Add the cooked quinoa and mix well so everything combines. Then add the chicken broth and evaporated milk, and stir...

Cook for about 3 minutes. To boost the flavor, add the Parmesan cheese, pecans, and nutmeg. Stir and cook for two more minutes, then add the shredded chicken and mix thoroughly. At this point, taste and adjust the seasoning, and cook until it reaches the right consistency. Turn off the heat and serve.

The rice is optional. Arrange slices of potato on the plate, top with the chicken and quinoa mixture, arrange nicely, and garnish with egg and olives. You can also sprinkle more Parmesan cheese and parsley leaves on top. Enjoy!

Note: Turmeric is optional. I used it because I added less yellow chili pepper paste and used 1 tablespoon of ground turmeric. Besides its benefits, it helps enhance the color of the dish. If you want, use 1/2 cup of chili paste. The same goes for nutmeg—if you don’t have it, just skip it.

Remember, cooking doesn’t have to be exact. You can play with the ingredients, as long as you respect the main idea and take care of the key ingredients.
