Tasted better than it looked - but I’m sharing because it was such a simple and tasty way to use up some odds and ends in the fridge. I’ve given the ingredients I used but you can use whatever you have that’s needs using up.

Tasted better than it looked - but I’m sharing because it was such a simple and tasty way to use up some odds and ends in the fridge. I’ve given the ingredients I used but you can use whatever you have that’s needs using up.
Steps

Cube the potatoes, halve the tomatoes and cut the peppers into rough chunks.

Place on a baking tray and drizzle with a generous glug of olive oil. I used my hands to coat the veg in the oil.

Season to taste with salt and power and a good tsp of paprika.

Bake at 200 C until the potatoes are cooked through. Turn occasionally during cooking. We served alongside simple roast chicken.
