Ingredients

6-8 servings
  • Filling:
  • 1 lbground beef or venison
  • 1yellow onion diced
  • 1 cupcarrots diced
  • 3 stalkscelery diced
  • 1 cupportobello mushrooms diced
  • 1 cangolden sweet corn
  • 1 tablespoonbutter
  • 2 tablespoonsflour or 1 tablespoon corn starch
  • 1/2 teaspoonsalt and pepper
  • 1/2 teaspoongarlic powder
  • 1/2 teaspoononion powder
  • 1sazon packet (not a necessity but I use it in everything)
  • 2 cupsbeef broth
  • 1beef bouillon cube
  • 4 tablespoonsworstichire sauce
  • 1 cup100% grape juice (NOT CONCENTRATE)
  • 1small can tomato paste
  • 2 stalksgreen onion diced
  • For the topping:
  • 10 medium sized potatoes
  • 1/2 cupheavy cream
  • 1/2 cupsour cream
  • 1/4 teaspoonsalt
  • 1/2 teaspoonpepper
  • 1/4 teaspoonpaprika
  • 1/4 teaspoononion powder
  • 4 ozsoftened cream cheese
  • 1 cupshredded cheddar jack cheese
  • 3-4green onions diced

Steps

  1. 1

    Take the diced onion, celery, carrots and mushrooms and place in a skillet on medium heat with butter and sauté until semi soft. About 5 minutes. Add in the ground beef or venison and cook until done.

    Mix in flour and cook one minute. Stir in everything else on the list for filling and bring to a boil.

  3. 3

    Reduce heat to simmer cover and cook 30 minutes.

  4. 4

    Mash the potatoes and stir in all the other ingredients for the potatoes.

  5. 5

    In a kettle wash and dice potatoes and cook until fork tender. And drain all water. Allow to dry 3-5 minutes.

  6. 6

    Heat oven to 375 and pour filling in a lightly greased baking dish. Top with potatoes and cheese. Bake 20-30 minutes until potatoes are golden brown on the edges and bubbly. You can pop it under the broiler for 3-4 minutes to make the cheese and potatoes extra toasty then top with green onion!
