Steps

Take a Mixing bowl and add gram flour, salt,1 teaspoon lemon juice and 2 tablespoons sugar in it. Gradually add water and make a thick batter. Mix all the ingredients well. Now pour boiled water in a steamer and grease the utensil with oil.

Now add eno fruit salt. Pour the dhokla batter in the greased utensil for 2-3 minutes and cook on low flame for 15-20 minutes.

Take a tooth pick test after 15 minutes by inserting it inside the dhokla. If the toothpick comes out clean, remove the utensil and allow it to be cool. Once it is cool,cut them in small square pieces and place them in a plate.

Now we will prepare the tempering. For this heat a pan with oil. Add mustard seeds. let it crackle. Now add curry leaves and green chillies. Fry for a while. Add 1/2 cup of water in the pan to boil then lower the flame and add lemon juice. Add sugar too. Once sugar is melted it is done.

Pour this chatpata. khatta meetha water all over the pieces of dhokla with the help of spoon. Khaman Dhokla is ready to enjoy.
