Uttapam is little thicker and is topped with different types of veggies like onion, tomato, capsicum, carrot, green chilli, sweet corn etc. which makes it even more healthier and tastier. Here I have prepared it with a twist by adding roasted vermicelli. It gives a unique taste and is more soft.

Uttapam is little thicker and is topped with different types of veggies like onion, tomato, capsicum, carrot, green chilli, sweet corn etc. which makes it even more healthier and tastier. Here I have prepared it with a twist by adding roasted vermicelli. It gives a unique taste and is more soft.
Steps

Dry roast vermicelli till pinkish. It will take 5 minutes. Switch off the flame and transfer it in a plate. Add 1/2 bowl hot water and place the lid and keep aside for 10 minutes.

Add semolina in a mixing bowl. Add curd and salt and mix well. Keep aside for 10 minutes.

Wash peel and chop onion, tomato, green chilli and coriander leaves. Add salt, red chilli powder, black pepper powder and chaat masala.

After 10 minutes add soaked vermicelli in semolina mixture and mix well. Add water to adjust the consistency of mixture. Whisk the mixture well. Add one sachet of eno and mix well.

Heat a non stick griddle and brush with a little cooking Oil and pour 2 tb sp batter. Spread vegetable mixture all around and press it with spetula. Sprinkle little cooking Oil all around. Roast for 2-3 minutes. Flip the side and roast from other side also. Flip again and roast again till golden. Likewise make all the uttapams.

Serve hot with sauce or chutney.
