Boil the potatoes and keep them aside.

After they cool remove the skin and mash them properly. Add the other spices and mix well. Now for the tempering, in a tempering vessel take oil and add mustard seeds and cumin seeds to it. Once mustard seeds crackles add all the ingredients for tempering to it. Now add this tempering to the mashed potatoes.

Mix well everything and make round balls from the mixture.

Now make the batter for the outer coating. Mix all the ingredients well and prepare it.

Dip the round balls into the batter, coat each ball properly and deep fry them on medium flame.

Serve the hot vadas with spicy garlic chutney.
