Roti/phulka/chapati/maani her ghar mein pakti hy thora bohat farak hota hy baki sab same hi banate hyn. Hum Punjabi desi log humari apni zameno ki gandum hoti hy phir usko saf krwa ke dho ke sokhya jata hy. Usk bad chaki se piswaya jata ha. Atta hum simple gondhty hyn salt ya ghee add nahi krte bus simple summers mein thora thanda pani aur winter mein neem garam ya fresh water se gondha jata hy. Dry Attay ki pini bana ke cover kar ke 15 minutes ka rest daite hyn aur usk bd gondhain atta bht jaldi aur smooth gondhta hy knead kar ke daby mein dal ke half hour ke liye refrigerator mein rakhein phir roti banaye. Soft roti ke liye hum peray mein thora sa butter lagate hyn jis se bht soft roti banti hy. Aaj mein apko apny style se atta gondhna aur soft roti bana batati hun step by step recipe with photo's.

Pan mein atta strain kar lain taza pani se pini (means sara atta achy se pani se mix krny ko hum pini bolty hyn) na hard ho na soft medium bana ke thora sa Pani sprinkle kar ke cover kar ke 15 minutes ke liye rest dain.

Us ke bad achy se knead kar lain aur dabay mein dal ke refrigerator mein half hour ke liye rakh dain.

Tawa ko garam karein. Aik normal size ka pera lain use thora sa bail lain aur light sa just like 1/4 tsp butter/desi ghee laga ke roll kar ke pera bana lain.

Tawa garam karein phly roti dalny se phly 1/4 tsp butter laga dain is tip se roti tawa per nahi chipkte.

Roti bail lain aur garam tawa per dal dain.

After 2 minutes roti ki side change karein usy pakny dain. Jab aik side se cook ho jaye tu tawa hata ke chamtay se stove per roti senk lain roti pholy gi.

Dono side se roti seenk jaye achy se roti ready hy. (Or ap butter aik side per lag ke b tawa per ulta sakti hyn ya tawa se utar ke b plate mein rakh ke butter laga lain. Ya without butter b serve karein.)
