Ingredients

  1. 115 GrRhubarb
  2. 1 TbspSugar
  3. 1 TbspPort Wine (Optional) or Orange Juice
  4. 1/4 CupWhipping or Double Cream
  5. 2 TbspGreek Yogurt (I like the full fat one)
  6. 1/2 TspPower Ginger

Cooking Instructions

    Slice Rhubarb into relatively small slices. Add the sugar and orange juice (Or Port) in a small pan and stir gently to dissolve the sugar. Bring to a low simmer and cook a couple minutes until the rhubarb softens. Try not to stir much as it softens to avoid breaking up the rhubarb. You can use Frozen

    Once cooked - set aside and allow to cool

    Put the cream and yogurt in a bowl and beat until relatively stiff peaks form

  4. 4

    Set aside a couple pieces of rhubarb to decorate the top of the glasses and fold the rest into the cream mixture. Divide the mixture between two glasses and top with the reserved rhubarb. Chill until ready to serve. I add a pc of Mint :)

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love. ENJOY :P

I am not much a fan of rhubarb, but this does look quite interesting. I am going to bookmark it and, provided I can find fresh rhubarb, I will try it.
