Risotto cooked in a pressure cooker turns out wonderfully. You can easily use just water instead of broth and still get a delicious, flavorful risotto. It cooks quickly, and voilà—a first course to be proud of.

Steps

Slice the speck into thin strips. Wash and finely slice the radicchio.

Bring the water to a boil in a small saucepan.

Add 5 tablespoons of extra-virgin olive oil to the pressure cooker. Lightly sauté the speck, then add the radicchio and cook for 4 minutes.

Add the rice, stir, and deglaze with a splash of white wine.

Pour in the previously boiled water and close the lid.

Cook for 5 minutes from the moment the pressure cooker starts to whistle (for al dente risotto) over low heat. Let it rest for 1 minute, then open the lid and add the grated Parmesan cheese.

Add a little salt and black pepper. Stir well and serve!
