  1. 2 1/4 lbseggplants
  2. 4 tablespoonstahini
  3. 3 clovesgarlic
  4. 3 tablespoonslemon juice
  5. Salt to taste
  6. Ground cumin
  7. 3 tablespoonsfresh chopped parsley
  8. Sesame seeds for garnish
  9. Sweet paprika

Cooking Instructions

    Preheat the oven to 430°F.

    Wash and pierce the eggplants with a knife. Place in the oven for 35-45 minutes (depending on size) and remove when they are soft.

    Peel the eggplants and place them in a food processor with the rest of the ingredients. Blend until it has a consistency similar to hummus.

    Plate and garnish with paprika, sesame seeds, or parsley.
