Soak the white peas for 4 to 5 hours, then rinse and cook them in a pressure cooker for 2 to 3 whistles.

Mash the boiled potatoes in a bowl. Add chili powder, chaat masala, and salt, then mix well. Add the bread crumbs (I used the edges of leftover bread) and mix to form a dough.

Divide the dough into small balls, flatten them, and shape into patties.

Heat oil in a pan and shallow fry the patties until golden brown.

Place the patties on a plate. Top with the boiled white peas, then add tomato ketchup, chili sauce, chopped onion, and sev. Sprinkle with chili powder, black salt, and chaat masala. Serve immediately.

Traditionally, tamarind chutney and green chutney are used instead of sauces, but I used ketchup and chili sauce since I didn't have all the ingredients for chutney. You can also add fresh cilantro and mint leaves on top before serving.
