This is one of the easiest yet so delicious and satisfying soup from the Niger Delta region (Delta State).
You can decide to make use of fresh fish, chicken or any protein of your choice.
I used goat meat and cow intestines for mine. In delta we take this soup with starch or eba.
Also please note: I was thought from childhood to add a bit of vegetable oil when making this soup and that is a method i stick to because in recent times i have heard some argue they rather not add vegetable oil. But yeah! this is my method i have come to love.

Ingredients

  • 1/2 kgGoatmeat (par-boiled)
  • 1big Dried fish (cooked and deboned)
  • Seasoning
  • Salt
  • 1cooking spoon Vegetable oil
  • 2roasted seeds Grinded ehuru spices (very smoothly grinded)
  • Peppersoup spices
  • 1 teaspoongrinded cameron pepper
  • 1/2peak milk cups of melon

  1. 1

    Put a pot on the fire and allow it to dry up. Then pour in your seeded melons and roast on low heat while stirring continuously until the melons starts to make bursting sounds. This should take like 3-5minutes

  2. 2

    When it has slightly changed color, put down from heat and stir once in a while because the heat from the pot keeps roasting the seeds and it might get burnt. So let it cool completely or pour into a bowl.

    Then put in a blender and add some water and blend to a very lite smooth paste

  4. 4

    Pour the blended melon in a pot and place on heat. Then add the vegetable oil

  5. 5

    Sieve in the meatstock and add the par-boiled goatmeat

  6. 6

    Add the ehuru spice, peppersoup spice, cameron pepper and cover to cook for 5 minutes

  7. 7

    At this stage the stock would have gotten thicker. Then add some water to desired texture and taste for seasoning then add more seasoning and salt if need.

    Add your par-boiled dried fish and cook more for 25-40minutes.
