Crumbed Chicken Spaghetti

Place the beaten egg in a shallow bowl
In another shallow bowl mix together the breadcrumbs, cheese and seasoning
Dip the chicken into the egg then the breadcrumbs
I always repeat this so they are double coated in the breadcrumbs - 2
Heat a drizzle of olive oil in a frying pan over a medium heat
Add the chicken fillets and cook for about 6 minutes on each side or until the breadcrumbs are golden and the chicken is cooked - 3
Bring a large pan of salted water to the boil and cook the spaghetti per the instructions on the packet

In a large pan place the olive oil and garlic on a medium heat
Add in the onion and sauté for 5 minutes
Add in the passata, cream, mixed herbs and season with salt and pepper
Bring to the boil and simmer for 5 minutes - 5
Stir through the spaghetti
Divide between two bowls and top with the crumbed chicken
Sprinkle over some spring onions and serve
