Start by making the dry caramel.

Put the sugar and lemon juice in a saucepan or nonstick skillet and cook over low heat until it turns into caramel.

Coat the bottom of the ramekins with the caramel and set aside while you prepare the flan mixture.

Crack the eggs into a bowl, add the sugar and vanilla, and mix with a whisk or spatula.

Gradually pour in the warmed milk while mixing.

Fill the ramekins with the mixture.

Place the ramekins in a water bath.

Bake at 340°F (170°C) for about 1 hour.

Serve chilled. Invert the ramekin onto a plate and let the flan release.
