Preheat oven to 375 degrees.

Wash the squash and cut off the ends. Cut down the center (long way) and remove seeds with a spoon. Slice into 1/3 inch half moons.

Add a few cloves of garlic, no need to peel, a thinly sliced shallot and some whole sage leaves. Toss or spray with olive oil, sprinkle with salt and pepper.

Roast for about 25-30 min or until cooked through. It will turn golden in places and should be easily pierced with a fork. If you want them crispier, leave them in a little longer.

Toast nuts in the same 375 degree oven for about 10 min or until they’re golden and smell good. If you’re using pine nuts, they will toast fast so keep an eye on them.

To serve, place on a platter and top with baked sage leaves and toasted nuts. Can add some chopped parsley and a squeeze of lemon.
