Preheat your oven to 230°F (110°C).

Place all the ingredients in your stand mixer with the whisk attachment. Beat on speed 8 for 10 minutes at 104°F (40°C), without the lid.

Using a spoon, drop small mounds of meringue onto a baking sheet lined with parchment paper.

Bake for 1 hour and 30 minutes.

When the time is up, remove the meringues and let them cool.
