Shakarkand-Matar ki sabzi

Peel and chop the sweet potatoes. Soak in cold water for 5 minutes.

Heat oil in a large pan. Add mustard seeds to it and let it splutter.

Then add cumin seeds, asafoetida, chopped sweet potatoes and water. Now add salt and give it a stir. Cover and cook on medium flame for 10 minutes or till the sweet potato is cooked well.

Check by mashing a piece. Once cooked, add boiled green peas, jaggery, lemon juice and rest of the spices to it. Cook for another 2-3 minutes or till the water has become thick gravy type. Turn off the flame

Garnish with coriander leaves and serve hot.
