Pap and chicken stew

Growing up we used to have chicken on special occasions namely birthdays, Christmas and Easter..., and sometimes when there are special visitors coming over. This recipe in particular is inspired by my childhood. Of cause back then they used to do it differently, but throughout the years I have mastered how to do it the way I like it.

Clean your chicken, removed the skin and excess fat and give it a cold wash

Chop your onions and tomatoes and make sure you have all your ingredients laid out in front of you.

Put your oil in the pan and add your onions. Fry the onions on medium heat until they are translucent

Add in your tomatoes and close the lid, let the heat do the work for you for a bit

When the tomatoes have cooked for about 3 minutes or so stir well and then add the raw chicken

Take the water and add the stock cube to the water and mix thoroughly. Add the liquid into the pan and let that cook.

Close the lid and let this cook still on medium heat got about 8 minutes.

Check the meat and and turn it and close the lid again for another 8 to 10 minutes then reduce the heat.

Add all your herbs at this point and lower the heat and let that cook down for another 8 min or so. This is just to make sure the meat is cooked well and the soup has good flavor from the herbs.

After all is said and done, you can have the stew with basically anything you want. For me my go to is pap and some green vegetables. By the way, the salt you can add it at any point in time but I recommend adding if need be at the last stage when you but the herbs.
