🍅 Ruby Crown Pav Bhaji Masala Rice | No Onion, No Garlic

Sometimes, simple boiled rice can become something special with a little creativity! ❤️
For Week 29 of Cookpad's Mystery Basket, I transformed simple boiled rice into a beautiful tomato masala rice using pav bhaji masala as the star ingredient and garam masala for extra aroma.
Fresh tomato purée coats every grain, while a fragrant ghee tempering of curry leaves and white sesame adds a delightful finishing touch. Shaped like a little crown, this ruby-red rice proves that even everyday ingredients can create something memorable!
No onion, no garlic—just simple ingredients, aromatic spices and a creative presentation. Perfect for a festive meal or a special lunchbox treat!

Steps
- 1
Prepare the tomato pure :
Wash the tomatoes, remove their skins and cut them into pieces. Blend into a smooth purée and keep aside. - 2
Cook the rice :
Wash the rice thoroughly and soak it for 30 minutes. Drain and cook in a pressure cooker until the grains are tender but separate. Spread the cooked rice on a plate and allow it to cool slightly. - 3
Prepare the masala :
Heat ghee and oil in a kadai. Add cumin seeds and let them splutter.
Add the tomato pure and salt. Cook over medium heat, stirring occasionally, until the purée thickens and the excess moisture evaporates.
Add pav bhaji masala and garam masala. Mix well and cook for another minute until fragrant. - 4
- 5
Combine the rice :
Add the cooked rice to the tomato masala. Gently mix until the grains are evenly coated with the beautiful red masala.
Switch off the heat and add lemon juice. Mix lightly without breaking the rice grains. - 6
Create the crown presentation :
Lightly grease a small bowl with ghee. Fill it with the prepared rice and gently press to shape it.
Place a serving plate over the bowl and carefully turn it upside down. Lift the bowl to reveal a neat, crown-shaped mound of ruby-red rice. - 7
Add the finishing touch :
Heat 1 tsp ghee in a small tempering pan. Add the curry leaves carefully and let them become crisp.
Add the white sesame seeds and allow them to release their aroma without burning.
Pour the fragrant tempering over the shaped rice and serve warm. - 8
Tips
* Use ripe tomatoes for a rich colour and balanced tanginess.
* Cook the tomato purée until thick to prevent mushy rice.
* Balance both masalas to suit your taste.
* Cool the rice slightly before shaping it into a crown.
* Add lemon juice at the end for fresh flavour.
