This sabzi is usually served in a big get together. It is quick to make and not many spices are required. It is tasty without onion or garlic. It is my favourite sabzi. I love the brinjals in this sabzi, specially because they are in big chunks. Use the long brinjals variety. Better if they are tender and pulpy. It do not use the egg plants as they melt in the process of cooking. Avoid using the brinjals with hard seeds as they taste bitter.

  1. 3big potatoes
  2. 1big brinjal (long variety)
  3. 4green chillies
  4. 1/2 bowlpeas
  5. 1big tomato
  6. 5 tbspoil
  7. 1/4 tspmustard seeds
  8. 1/4 tspCumin seeds
  9. 1 pinchasafoetida powder
  10. 1/4 tspdhanajeera powder
  11. 2 tspchilli powder (adjust quantity)
  12. 1/4 tspturmeric powder
  13. 1/2-3/4 tspsalt

    Cut potatoes, brinjals and tomatoes into large chunks. Heat oil in a pressure cooker. Crackle mustard seeds and then add cumin seeds, asafoetida powder, turmeric powder and green chillies. Next add chilli powder and quickly add the veggies.

    Add the rest of the spices, mix well and fry for a minute. Then add water slightly below the level of the veggies. Combine everything and bring it to a big bubble boil.

    Cover the cooker and let the whistle release twice on high flame. Turn off the stove and let the cooker cool down. Serve without mixing much or else the veggies will belreak. This shake goes really well with everything, but tastes the best with Puri.
