Basic Agar-Agar Mix

Agar-Agar is basically a jelly substance extracted from Sea-weed. Agar-Agar are the popular Sea derived flakes that gel when combined with liquids making it perfect for Vegetarians and all the Muslims plus those who are concerned with eating Halal. It's an all natural substitute for Gelatin which is non halal. You can always use Cornstarch in place of Agar-Agar but it doesn't go well with all the recipes. Agar-Agar is therefore definitely a better one. Also known as China Grass, it is a healthy alternative to Gelatin. Agar-Agar is low in saturated fat and cholesterol and very rich in Calcium, Iron, Folate and Vitamins etc. Hence it is a very popular one among diet conscious people interested in weight loss and maintaining healthy lifestyle.

First of all, cut all the Agar-Agar strands or sticks into small pieces. I usually store them like this because they are very much handy that way. You can directly add them to the boiling water.

Add about 2-3 tablespoons of these pieces of Agar-Agar to the boiling water. Allow it to simmer on a low to medium high heat. Keep an eye on it. Keep stirring in between. Add water according to the amount of Agar-Agar taken.

As soon as it's done, you will see that it has dissolved completely in the water and has turned glossy and transparent. This is the right time to take it off the heat. This can therefore be added to any Dessert that you plan to make. Mix well and allow it to set outside for a while until it is cooled down a bit and then refrigerate until fully set as required.

Remember that whatever the Dessert, both the main ingredients should be hot in order to get a decadent Dessert. For example, if you are making Coconut Milk Panna Cotta, then you need to boil Milk also and add it to the dish in which you want to set it. Next boil Agar-Agar and add it to the dish. Mix well and allow to set.

If you add hot Agar-Agar to cold ingredients, it might be a big failure. So both of the main ingredients used should be hot and mixed. And then given ample time for setting. Slice and enjoy!

Even if you use Agar-Agar powder which we easily get on Amazon India. We need to add it to the water, mixed well and then heated up until a single boil. It is absolutely necessary. Otherwise the Dessert won't set properly. I have made Coconut Milk Panna Cotta, Coconut Water Panna Cotta, Coconut Milk and Jaggery Panna Cotta, Japanese Fruit Jelly, Watermelon Pudding etc. All of the recipes are on my profile.
