Steps

First of all peel off carrots and cut into slices and cut green chilies from mid.

Take a big vessel and add water in it make a boil. Then add cut carrot pieces and cover for five minutes. Switch off the gas.

After 5 minutes drain all water and strain carrots.

Spread them on a kitchen towel for 10 minutes.

Take all dry spices (khade masale) in a mixer jar and grind them coarsely.

Take a pan add oil heat it well then add mustard seeds. Let them crack.

Then add asafetida. Then add Kashmiri Mirch.

After it adds carrots and green chilies mix well.

Then add all dry masala to it and mix properly. Add red chili powder.

Then add dry mango powder and salt

Mix properly and let it cool down.

Then add vinegar. It works as a preservative

Instant pickle ready. serve with hot paratas.
