Use an 8-inch or 9-inch springform pan. Preheat the oven to 410°F (210°C). Put all the cream cheese in a bowl and beat it lightly.

Add the eggs one at a time, mixing with the cream cheese after each addition. Add the sugar and mix well, then sift in the flour and continue mixing.

Now add the heavy cream and stir well.

Pour the cheesecake batter into the pan and bake at 410°F (210°C) for about 40 minutes. Leave the pan in the oven with the door slightly open so it cools down gradually.

After that time, remove the cheesecake from the pan and take off the parchment paper—it will come off easily.

Dampen two sheets of parchment paper and crumple them so they fit better. Line an 8-inch springform pan with the parchment paper; don't trim off the excess paper.

Take the cheesecake out of the oven and let it cool for about 4 to 5 hours. Even if it jiggles when you take it out, don't worry—that's normal, and it will firm up as it cools. That's what makes it so creamy.
