Chop and clean the methi leaves. Wash it nicely. Allow the water to drain completely. Then in a big vessel, assemble all the 3 flours. Add all the ingredients. Mix well.

Now add oil, mix again and add methi leaves. Make a dough. Don't add water, the water in the leaves is enough to make a dough but If reqd you can add 1 or 2 tsp of water. Apply little oil and knead it for a minute.

After resting the dough for 10-15 minutes, grease your hands and make small balls and then give shape of muthiya.

Heat oil, deep fry in batches till golden brown and crispy. You need to fry on slow to medium flame, so that it doesn't burn and they get cooked from inside too. When done cool completely and then store it in an airtight container. Can enjoy it with tea
