Finger millet/ Ragi / Nachni is a glutenfree grain which is rich in fiber, iron, calcium, good carbs, amino acids and vitamin D. It is considered to be a great food for weight control, diabetes.
Dhokla is a famous Gujarati steamed snack. Dhoklas prepared from.rice and lentil fermented batter need advance planning to prepare as it includes process like soaking, grinding, fermenting and steaming . There are also quick and instant recipes for spongy dhoklas which are prepared from semolina, gram flour etc.
Here is Ragi Dhokla prepared in combination with semolina.

Ingredients

35 minutes
4 persons
  1. 2 cupsRagi flour
  2. 1.5 cupsemolina
  3. 2 tbspgreen chilli paste
  4. 3 cupsbuttermilk
  5. 2 tspfruit salt
  6. as per taste Salt
  7. For temparing:
  8. 2 tbspoil
  9. 1 tspmustard seeds
  10. 1 tspcumin seeds
  11. 1 tspsesame seeds
  12. 8-10curry leaves
  13. Pinchasafoetida
  14. as requried Coriander for garnish

Steps

35 minutes
  1. 1

    Mix ragi flour, semolina,salt, green chillies.

    Add buttermilk and prepare lump free batter. Cover and keep it aside for 15 minutes.

    Turn on the heat and add water in steamer and let it boil. Grease thali or plate with oil.

    Now check the batter, if it looks thick, add some water or buttermilk. We need batter like idli. Add fruit salt and mix well. Immediately pour batter in greased plate.

    Put this plate in steamer, cover and let it cook for 12-15 minutes.

    Once it cooks, remove from the steamer, wait forva while and cut it in desired shape and size.

    Heat oil and prepare temper from tempering ingredients and pour over dhoklas.

    Garnish with coriander and serve. You can skip tempering. It tastes good with coriander chutney and ground nut oil.
