Another weeknight, another quick and easy pasta for dinner. This simple but tasty dish can be whipped up with things you probably already have in your pantry.

In a medium pan, fry the bacon on medium-high heat until crisp. Remove the bacon to a paper-towel lined plate to drain. Also remove all but a few tbsp of bacon grease (don't throw it away, it's a great starter for fried rice).

While you're waiting for the bacon, drop the linguine into a large pot of boiling salted water.

Add the onions to the pan you used for the bacon and fry for about 5 minutes until browned. Add the garlic and peas and fry another 2 minutes. Turn off the heat and add a ladleful of pasta cooking water to the pan to keep the peas from overcooking.

When the pasta's cooked, drag the noodles into the pan and sprinkle in most of the cheese. Crumble the bacon and add it as well. Toss to coat, then check the seasoning. Add extra salt and black pepper as needed. Sprinkle with the remaining cheese when serving.
